Onion Sauce

Servings 1.2 Quartz

Ingredients
  

  • 1 Tbsp. Olive oil
  • 1 Tbsp. butter
  • 3 jumbo Idaho-E Oregon yellow onions julienne
  • ¾ c. Apple Brandy
  • 2 medium Granny Smith apples cored peeled, and diced
  • tsp. Thyme dried and crushed
  • 1 c. Apple cider
  • 1 c. vegetable stock
  • 1 Tbsp. fresh Italian parsley finely chopped
  • tsp. fresh Thyme finely chopped
  • 3 dashes of bottled hot pepper sauce Tabasco
  • Salt as needed
  • Ground pepper as needed

Instructions
 

  • Heat butter and oil in large pot; add onions and cook until caramelized.
  • Add cider and stock; cook at medium heat for about 20 minutes.
  • Add apples, dried Thyme, and Brandy; simmer for 5 minutes.
  • Add remaining ingredients; mix well.
  • Puree in food processor until smooth.
  • Adjust seasoning with salt and pepper.
  • Nice compliment to pork entrees.
