Onion Sauce
Ingredients
- 1 Tbsp. Olive oil
- 1 Tbsp. butter
- 3 jumbo Idaho-E Oregon yellow onions julienne
- ¾ c. Apple Brandy
- 2 medium Granny Smith apples cored peeled, and diced
- 1½ tsp. Thyme dried and crushed
- 1 c. Apple cider
- 1 c. vegetable stock
- 1 Tbsp. fresh Italian parsley finely chopped
- 1½ tsp. fresh Thyme finely chopped
- 3 dashes of bottled hot pepper sauce Tabasco
- Salt as needed
- Ground pepper as needed
Instructions
- Heat butter and oil in large pot; add onions and cook until caramelized.
- Add cider and stock; cook at medium heat for about 20 minutes.
- Add apples, dried Thyme, and Brandy; simmer for 5 minutes.
- Add remaining ingredients; mix well.
- Puree in food processor until smooth.
- Adjust seasoning with salt and pepper.
- Nice compliment to pork entrees.
